Fruit curds differ from most jams, pie fillings, and custards in that they contain a higher proportion of juice, less sugar, and are made with butter and eggs for a smooth and creamy texture.

Allulose is a pretty special sugar, in fact, it was the first sugar the FDA allowed to not be included as part of the total or added sugars declarations on nutrition labels. This also makes the net carb calculation using the nutrition label a confusing. That is why The Unsweetened Tooth employs an expert, third-party nutrition lab to analyze, calculate nutrition and produce our nutrition labels.
In the case of The Unsweetened Tooth Blackberry Curd, the calculation for net carbs would be as follows:
10g total carbohydrates - 0g fiber - 8.7g allulose = 1.3 net carbs per serving
On April 17, 2019 the FDA issued guidance on the labeling of allulose, a sweetener that may be used as a substitute for certain sugars in foods, so that the information presented on Nutrition and Supplement Facts labels appropriately represents its unique properties. Allulose is different from other sugars in that it is not metabolized by the human body in the same way as table sugar. It has fewer calories, produces only negligible increases in blood glucose or insulin levels, and does not promote dental decay. As such, the FDA issued guidance stating that they intend to exercise enforcement discretion to allow allulose to be excluded from the total and added sugars declarations on the Nutrition Facts and Supplement Facts labels when allulose is used as an ingredient. As with other ingredients, allulose must still be declared in the ingredient list. This blackberry curd is the best tasting sugar free curd that Jude has produced! I love the other ones as well! But put this in your yogurt, on your toast, I’m finding excuses to eat it. Excellent Alternative to Jelly/Jam
I am Keto and I do the OMAD fasting 5 days a week. I love making Kefir, flax and chia seeds “pudding” and this blackberry curd is amazing with it. I love the lemon to give me a lemon meringue pie taste. The strawberry is amazing on toast. Amazing customer service! Very hands on. When I made a comment on an order in comments that I wish the Peach taste was stronger they refunded me! I was not seeking this. They also had me try the cherry on them. What a surprise. I hope they intensify the peach and I will be buying more cherry.
