Keto English Fruit Fool Recipe

9 oz The Unsweetened Tooth Fruit Curd flavor of choice, divided
1 cup heavy whipping cream
¼ cup sour cream or marscapone cheese
1 cup fresh or frozen berries
1 tablespoon, or to taste, alternative sugar
- For the fruit compote, combine berries, any residual juice, and sugar in a medium saucepan. Bring to simmer over medium heat. Reduce to gentle simmer and gently mash fruit, leaving some larger chunks. Continue cooking until mixture is slightly thickened. Remove from heat and allow to cool completely.
- Using a hand mixer, whip the heavy whipping cream into stiff peaks. Fold in half of the fruit curd and sour cream. Set aside.
- In 4 small glasses or a small trifle bowl, layer the following: 1/3 of the whipped cream mixture, remaining fruit curd, 1/3 of the whipped cream mixture, fruit compote, remaining whipped cream mixture.
- Gently swirl with a skewer or chopstick and top with fresh fruit if desired. Chill.
