Keto English Fruit Fool Recipe

If you're a fool for sweet, tart and creamy, this classic English dessert of mashed berries and fruit curd folded into sweetened (use any alternative sugar you wish) whipped cream, then this dessert is a must-try. Serve it safely to your gluten-free and keto friends! They'll never guess that there's zero added sugar. This recipe is dynamite with Blackberry Fruit Curd and all the other flavors in The Unsweetened Tooth lineup—or try a combo of Blackberry and Lemon. Divine!

INGREDIENTS

9 oz The Unsweetened Tooth Fruit Curd flavor of choice, divided
1 cup heavy whipping cream
¼ cup sour cream or marscapone cheese
1 cup fresh or frozen berries
1 tablespoon, or to taste, alternative sugar

DIRECTIONS

  • For the fruit compote, combine berries, any residual juice, and sugar in a medium saucepan. Bring to simmer over medium heat. Reduce to gentle simmer and gently mash fruit, leaving some larger chunks. Continue cooking until mixture is slightly thickened. Remove from heat and allow to cool completely. 
  • Using a hand mixer, whip the heavy whipping cream into stiff peaks. Fold in half of the fruit curd and sour cream. Set aside. 
  • In 4 small glasses or a small trifle bowl, layer the following: 1/3 of the whipped cream mixture, remaining fruit curd, 1/3 of the whipped cream mixture, fruit compote, remaining whipped cream mixture. 
  • Gently swirl with a skewer or chopstick and top with fresh fruit if desired. Chill.
