Keto Blackberry Cheesecake Parfait Recipe
There's nothing quite like the tart burst of a perfectly ripened blackberry. As summer winds down, this luscious fruit makes it in to pies, jams, jellies, and OUR perfectly sweetened Blackberry Fruit Curd. One of the ways we celebrate summer all year long is by whipping up this super easy and quick Blackberry Cheesecake Parfait. It is a keto-friendly dessert that everyone will love. Give it a try with any of The Unsweetened Tooth fruit curd flavors.
For the Crumb Layer:
7 tablespoons almond flour
2 tablespoons powdered sweetener of choice
1 tablespoon melted butter
For the Cream Cheese Layer:
16 oz cream cheese
1/4 cup milk
1/2 cup powdered sweetener of choice
1/2 t vanilla extract
1/4 cup plus 2 tablespoons The Unsweetened Tooth Lemon Curd, divided
For the Curd Layer:
4 heaping tablespoons The Unsweetened Tooth Blackberry Curd (try our other flavors, too!)
- In a small mixing bowl combine Crumb Layer ingredients and mix until combined. Set aside.
- In a medium mixing bowl combine Cream Cheese Layer ingredients and beat with hand mixer until smooth
- Divide crumb mixture between four small glasses. Spoon half of the cream cheese mixture on top of crumb layer. Spoon one heaping tablespoon of curd atop of cream cheese layer. Top with remaining cream cheese mixture. Garnish with whipped cream and blackberries.
